dc.description.abstract | Granular cold-water-soluble rice starches were prepared from normal amylose, high amylose, and waxy rice starches by treating the rice starches with mixtures of ethanol and alkaline or dimethyl sulfoxide (DMSO) solutions at a controlled temperature. The efficiency of the processing method depended on rice starch variety, concentration of ethanol, NaOH and DMSO, and reaction temperature. Higher concentration of NaOH, or higher reaction temperatures gave better cold-water-solubility of the treated rice starches. The rice starches displayed an increased amount of cold-water-soluble of 50 to 72% after treatment, which was significantly higher than the native starch (1-3% soluble). The granular cold-water soluble rice starches were shown lower viscosity and higher paste clarity than those of their native rice starches counterparts.
