dc.description.abstractMicroorganisms include bacteria, fungi and yeast that can produce cellulase and pectinase activities were isolated from pepper plant. A group of 5 fungi, 2 bacteria and 1 yeast were selected hydrolyze cellulose in agar plate assays and pectin produced galacturonic acid. Especially, this group produced a great amount of cellulase. These microorganisms produced high enzymatic activity used not only to apply in food industries, but also others application fields in life. A malt culture medium with nutrients (carbon, nittrogen mineral molecules) was designed for isolation and enzyme production from pepper plant. The isolated microorganisms can be used for others researches are Aspergillus oryzae, Aspergillus niger, Bacillus amyloliquefaciens, Bacillus polyfermenticus, Sporobolomyces carnicolor and Pseudozyma shanxiensis but the exception Fusarium proliferatum and Glomerella cingulata.
