dc.description.abstractPitaya, well-known as ―dragon fruit‖ or ―strawberry pear‖, has become one of the most popular, nutritious fruit. Dragon fruit is cultivated in Southeast Asia, Florida in the United States, the Caribbean, Australia and throughout tropical and subtropical world regions. In Vietnam, it is planted mostly in Binh Thuan province. Dragon fruit plays important role on export of agricultural products in Vietnam total output. However, Covid-19 pandemic has impacted greatly to export value of this kind of fruit. That leads us to find a feasible solution to solve this problem. This research applied the DMAIC (Define, Measure, Analyze, Improve, and Control) model to enhance the harvesting and preservation processes for red-flesh dragon fruit, which can ensure the fruit‘s efficiency for the customer satisfaction. The DMAIC model was built to help the researchers and chosen members identify and recognize the process issues, evaluate current output and analyze the root causes of the processes delays. Together they established an improvement plan that proposed all changes to enable quality operations.en_US
