Isolation and identification of yeast and bacteria that produce cellulase and pectinase activities from coffee plant
Abstract
Cellulase and pectinase are used in various fermentations as coffee, pepper, or
cocoa for mucilage removal and also flavor enhancement. However, the sources of
microorganisms are important, so in the study, the purpose is to isolate yeasts and
bacteria producing these enzymes. In this study, the purpose is to isolate yeast and
bacteria that can produce cellulase and pectinase. Therefore, the research mainly
found yeasts and bacteria in the coffee plant can produce cellulase and pectinase
activities. Seven strains of yeasts and bacteria were determined including Candida
quercitrusa, Klebsiellaoxytoca, Erwiniasp, Enterobacter cloacae,
Gluconobacteroxydans, Enterobacterludwigii, Erwiniabillingiaewhich isolated in
coffee plant. This is the first step showed microorganism sources that isolated from
components of coffee plant had enzyme activities. From that, it can be concluded
that this study may be applied well in the conditions of the production of the
enzyme were studied and make enzyme production.
