dc.description.abstract | In industry, there are large amount of pineapple skins, cores, leaves, etc
(waste-products) are thrown after processing. Most of farmer sold them for dairy
cow’s farm or used it in feeding for their own cow, but the profit of these ways
was not significant enough. However, reusing of pineapple trash can improve the
economic benefits. In real situation, 1liter of milk’s cow (about 0.89 kg) cost 5-
10 USD, 1kg cow’s meat cost 10-12 USD but 1kg bromelain cost 200 USD while
the production costs of extraction are cheaper than building a big farm.
Pineapple’s wastes are a main source for extraction of bromelain and this
enzyme needed in this social life because of its application in various fields like
medical, food and cosmetics. This thesis was aim to the extraction of bromelain
from waste product (outer skin and core) and finding the optimum condition of
this process.The results of this thesis prove that the highest of bromelain activity
when mixing the pineapple juice withammonium sulfate 80% concentration was
42.5 UI/mg. After this research, a new way for treating pineapple’s trash may be
establish. All of the chemicals of this research were bought from China with
Bach Khoa chemical company is distributor and the equipments of Food
Engineering Lab were bought from Germany (Merk). The new Anson method was
applied in calculating activity of bromelain and the protein determination of
bromelain was estimated by Lowry method. | en_US |
