Study on technological conditions for extraction of bromelian from by - products (shoot and tap root) of pineapple at Minh Dat's company
Abstract
Bromelain is a protein digested enzyme, aqueous extract that is extracted
from the shoot and tap root of the pineapple. Recently, a wide range of therapeutic
benefits have been attributed to bromelain such as the reversible inhibition of
platelet aggregration, impoved recovery after surgical traumas, etc. The purpose of
this study was to survey the technological conditions that optimizing the extraction
of enzyme bromelain from waste of pineapple. It is usually prepared using
centrifugation, ultrafiltration methods, and precipitation by ammonium sulfate,
acetone or ethanol, and freeze-drying. At the different conditions, the bromelain is
surveyed the activity of each kind of enzyme at that condition.The efficiency of the
extraction of bromelain was confirm by the new Anson method and Lowry method,
showing that this method could be used to check the activity of bromelain exactly.
The results showed that bromelain was recovered by ammonium sulfate at 80%
that get the highest activity. The bromelain extraction method using tap root of
pineapple in this study yielded specific enzyme activity of 72,68UI/mg. However, in
the same condition, using the shoot that getting activity better than tap root, it’s
achieved 98,37UI/mg.If the study is successful,so the application of them for the
food industry.
