dc.description.abstract | Black garlic has become more popular in Vietnam due to its interesting biological activities. However, the quality of black garlic in the Vietnamese market has not been studied yet. Therefore, this research was carried out to exam the biological activities of different kinds of black garlic in Vietnam, including antimicrobial, anticancer cell line and immunostimulatory properties.
The antimicrobial activity was performed by applying agar well diffusion method against ten strains of Gram-negative Salmonella and four strains of Gram-positive Listeria monocytogenes; those were isolated from foods, showing resistance to some antibiotics. There were not significant differences in the antimicrobial activities of the tested black garlic. However, different black garlic showed different effects against human liver cancer cell line (HepG2) using SRB assay. Surprisingly, higher amount of black garlic showed lower anti-HepG2. Moreover, the immunomodulatory ability of black garlic was studied in this research. Even though black garlic showed effects on immune cells, it gave the spleen to be larger terribly in mice. The study warned human to be careful when using black garlic. To exploit black garlic, anti-HepG2 compound should be purified to be dosed carefully.
