dc.description.abstractCoffee is one of the most popular beverages in the world and brings a high economic value for developing countries. To increase soluble solids content, many methods were studies such as chemical methods, physical methods and biochemical methods. However, biochemical methods is one of the best way that is more safety, friendly with environment and budget saving to increase soluble solids content in coffee production. Therefore, biochemical method was applied for this task. In this study, Pectinex Ultra SP-L and Leafcell were applied to carry out the optimal conditions for coffee treatment. Enzyme ratio of Leafcell was 0.3% while it was 0.4% with Pectinex Ultra SP-L. The soluble solids content increased after study by Leafcell (16.1%) and Pectinex Ultra SP-L (18.6%). The best result in this study was Pectinex Ultra SP-L and Leafcell combination. The soluble solids content of enzyme combination increased up to 20.18% in comparison with control sample. In addition, instant coffee was produced by using Spray dryer. The contribution of this study is that Pectinex Ultra SP-L and Leafcell combination can be applied in pilot scale to achieve highly expected results.
