Moringa oleifera seeds originated from Vietnam and Cuba were extracted using percolation and shaking incubation methods. Extraction was carried out using 3 descending concentrations of ethanol (96%, 70%, and 45%) in order to completely extract all bioactive compounds available in Moringa oleifera seeds. In vitro study on antibacterial activity, M.oleifera seeds from by percolation method revealed moderate minimum inhibitory concentration (MIC) values against Staphylococcus aureus. Especially, seed extract from Vietnam through percolation process demonstrated relatively good interference towards Vibrio cholera at the lowest concentration of 0.195 mg/ml. Yet, Escherichia coli appeared to be unsusceptible at the extract concentration of 50 mg/ml for all extracts. Anti-inflammatory research based on carrageenan-induced mouse paw edema indicated significant reduction in the inflamed site for all extracts. Seed extracts from Cuba and Vietnam using percolation method (1.374 g/kg and 1.470 g/kg, respectively), expressed myeloperoxidase (MPO) inhibitory activity at the edema area similarly as anti-inflammatory drug prednisone at the dose of 5 mg/kg Keywords: Moringa oleifera seeds, percolation, shaking incubation, antibacterial, anti-inflammation, myeloperoxidase.en_US
