dc.description.abstract | The main purpose of this study was to evaluate the efficiency of ultrasound treatment combination with enzymatic application on pumpkin seed oil from aqueous extraction method. In this study, the oil yield was the standard to evaluate the effect of ultrasound based on the change condition during ultrasound: different time and different temperature and conduct ultrasound after or before enzymatic treatment. The enzyme – assisted aqueous extraction (EAAE) was carried out with commercial enzyme Viscozyme Cassava C. Time ultrasound had range from 2.5 min to 10 min and temperature ultrasound had range from 30 °C to 50 °C. The best conditions for pumpkin seed were 5 min in time and 40 °C during ultrasound; and ultrasound treatment cum following EAAE. Comparing to control samples: without enzyme and ultrasound (12.57% ± 0.83), the optimum condition had significant difference and reached the highest yield (30.33% ± 0.64). There were several evaluated indicators: moisture content (MC), specific gravity (SG), free fatty acid (FFA), peroxide value (PV), total phenolic content (TPC) and fatty acid composition.
