dc.description.abstract | The purpose of this study was to find out the optimal spray-drying conditions for producing
instant powder from pomelo peel extract. Concentration of carrier (10%, 15% and 20%),
ratio of carriers (mixture of maltodextrin and gelatin) and inlet temperature (110oC, 130oC
and 150oC) were used to investigate the appropriate condition. Analysis of total flavonoid
content, total antioxidant activity, solubility and efficiency of encapsulation were examined.
At 110oC, 10% concentration and ratio of carrier 5:5, pomelo peel extract powder obtained
highest total flavonoid content (0.713 mg RE/g DW) and highest efficiency of encapsulation
(62.28%), total antioxidant activity around 10.23% and solubility at around 51.5%. Highest
total antioxidant activity was 18.52% at 110oC, ratio of carrier between maltodextrin and
gelatin 7:3, concentration 10%. Solubility was highest with 70.15% at concentration 10%,
ratio of carrier 5:5 and 150oC. After scanning electron microscopy, the particle was spherical
in shape, its surface was rough because of high temperature and do not shrink or hollow
after spray-drying. The concentration of carriers, ratio of carrier and temperature affect the
retention of total flavonoid content and antioxidant activity of the powder. In conclusion, the
optimal spray-drying condition was at concentration 10%, ratio of carrier 5:5 and 110oC, at
that condition, total flavonoid content and efficiency of encapsulation were obtained highest. | en_US |
