dc.description.abstract | Debranched starch which was produced by pullulanase hydrolysis acquires a good functional
material. In this study, the effect of concentration of essential oil complexing with debranched
starch (0.5 ml/g, 1 ml/g and 2 ml/g) on functional and structural properties of complexes were
investigated. The debranched starch complexing with pomelo essential oil had an antioxidant
and antimicrobial activities. The antioxidant activities of debranched starch complexing with
pomelo essential oil were determined by the 2,2-diphenyl-1-picrylhydrazyl (DPPH) assay,
whereas the antimicrobial activities were determined by growth inhibition zone diameter assays
against -two microorganisms including Bacillus cereus and Pseudomonas aeruginosa. All most
three concentrations of debranched starch complexing with pomelo essential oil showed the
high result on antimicrobial activity of two strains bacteria by diffusion method around 11.4mm
to 18.5mm before and after storing one month , except the concentration (0.5mg/ml) did not
inhibit B. cereus. In addition, the antioxidant activity of the concentration (2 mg/ml) was higher
than other concentration before and after storing. The structure of debranched starch
complexing with pomelo essential oil was observed by scanning electron microscopy. This had
an irregularly shaped and small size due to the breakdown of starch granules through
debranching process. This study indicated that an irregular structure of debranched starch
complexing with pomelo essential oil suggesting an organization of this new material. | en_US |
