dc.description.abstract | Ngoc Linh ginseng (Panax vietnamensis) is a valuable species of ginseng in Vietnam
and is currently threatened because of overexploitation. Recently, the Biotechnology
Center of Ho Chi Minh City had developed an in vitro method for cultivation hairy
root of Ngoc Linh ginseng for high biomass multiplication rate, not only shortening
the production time but also creating high-content products. Apart from fresh
ginseng, there are many ways for treating ginseng to increase the chemical
compounds in ginseng such as heat treatment for producing red ginseng or
steaming and drying several times for producing black ginseng. In this project, hairy
root ginseng was used as material for heat treatment to produce red ginseng and
examine the effect of different temperature and treating time to the components of
the final product, including polyphenol and flavonoid contents. The total polyphenol
and flavonoid content in Red ginseng were higher than in White ginseng. In general,
the total polyphenol and flavonoid content increased with the increase of
temperature and heat-treating time. The highest total polyphenol content was
45.03±5.92 mg gallic acid equivalent per gram of dried extract in 110oC for 120
minutes. The highest total flavonoid content was 17.50±8.25 mg quercetin
equivalent per gram of dried extract in 90oC for 60 minutes. | en_US |
