dc.description.abstractThe purpose of this study was to determine the effects of spray-drying temperatures and carriers on the physical and antioxidant characteristics of cashew nut testa extract powder, which is a rich source of phenolic compounds and antioxidants. In this research, the spray-drying method was applied to investigate the appropriate drying condition and the concentration of carrier agents for total phenolic content (TPC), total flavonoid content (TFC), DPPH scavenging capacity, and total catechin content (TCC) dried from cashew nut testa (Anacardium occidentale L.). The objective of this study was to determine the appropriate drying condition of spray-drying method and the concentration of carrier agents, including independent variables: inlet temperature (110℃, 130℃, and 160℃), ratio of starch soluble (5%,10%, 15%) and ratio of the mixture of starch soluble and gelatin (7:3, 6:4, 5:5). The most appropriate conditions were as follow: inlet temperature of 130℃, ratio of starch soluble of 10%, and ratio of the mixture of starch soluble and gelatin of 7:3. The results showed that under appropriate spray-drying conditions, ratio of individual starch soluble and the mixture of starch soluble and gelatin, total phenolic content of mg 14.608 ± 0.382 GAE/g dry basis, total flavonoid content of 16.353 ± 0.789 mg RE/g dry basis, radical scavenging activity by DPPH assay of 52.210 %, and total catechin content of 44.042 ± 2.056 mg CE/g dry basis were obtained from the cashew nut testa powder. The impact of the spray-drying method on the measure of TPC, TFC, antioxidant capacity, and TCC from cashew nut testa powder followed by an equivalent trend, demonstrated that the obtained data are relatively reliable.en_US
