Nutritional Value Of Queen Ananas Comosus, Cayenne Ananas Comosus, Md2- Golden Yellow Ananas Comosus Cultivated In Vietnam
Abstract
Pineapple (A.Comosus), specifically Queen pineapple (Ananas comosus var. Queen), Smooth
Cayenne pineapple (Ananas comosus var. Cayenne), and Super sweet honey pineapple
(Ananas comosus var. MD2) are three varieties of pineapple grown widely and most
commonly consumed in Vietnam. The samples in this study were collected from Kien Giang,
Daklak, Phu Yen, Tien Giang, Dong Thap provinces in Vietnam. This study used standard
food analysis methods to analyze macronutrient, phytochemical, anti-nutrient, micronutrient
contents of three selected pineapple varieties. Some nutritional values of Vietnam pineapple
that are superior to some published articles include carbohydrates in QAC (11.02±2.55 g/100
g), vitamin C in CAC and QAC (31.1± 0.2 and 30.2±0.2 mg/100 g), respectively), vitamin B6
in MD2 (0.185±0.06 mg/100 g), and chloride in QAC and CAC (300±3.72 and 340±3.27 mg/
100 g, respectively). Among the three selected pineapple varieties, CAC dominated in TPC
(21.93 ± 2.72 mg/100g), TFC (6.145 ± 0.766 mg/100g) and QAC had the highest IC50 (162.7
± 0.242 μg/mL) and bromelain (1.563 ± 0.031 UI/g) values. In addition, the anti-nutrient
content of oxalates in all three varieties was much higher than other journals. The results
indicate that pineapple cultivars cultivated in Vietnam possess a high concentration of
nutrients that contribute to Vietnamese cuisine and can serve as a healthy snack for
individuals aiming to lose weight. The results of this research can be used as basic
information for companies, businesses and individuals in selecting and using different
pineapple varieties in Vietnam.
