dc.description.abstractCurculigo orchioides (C. orchioides) is a medicinal plant which contains various phytochemical content and antioxidant properties. The aim of the study was to find the drying conditions (temperature and durations) of C. orchioides for a high amount of total saponin. Results that the 75oC and 5h are the optimal conditions with total saponin content (8.291 mg OAE/g of extract), total phenolic content (15.67 mg GAE/g of extract) and total antioxidant activity (0.97 mg VCE/g of extract). The extract is used to supplement jelly samples. Jelly samples were prepared by adding different amount of Curculigo orchioides extract (0%, 0.1%, 0.2%, 0.3%, 0.4%, 0.5%) and the total saponin of the jelly samples showed a significant increase (p < 0.05) from 0 to 0.49 OAE mg/g of extract. The texture profile of the jelly samples showed a slight increase (p < 0.05) in hardness with increasing levels of Curculigo orchioides extract supplementation, while cohesiveness decreased. According to sensory analysis, jelly samples had ratings ranging from 6 to 8 for the tested attributes, with 0.5% Curculigo orchioides extract-containing jelly samples receiving the highest acceptance score. Therefore, this study contributes to drying technology for high saponin content of Curculigo orchioides and applies valuable phytochemical and antioxidant compounds to confection products.en_US
