dc.description.abstract | In this study, pomegranate fruits grown in Vietnam were selected from a local market for performing the tests on physical and chemical characteristics. The average weight of a fruit was 224.0 g and the geometric diameter 68.0 mm. The composition of 3 main fruit parts for peels, juice and seeds were 17.30%, 55.68%, and 6.70%, respectively. Total monomeric anthocyanins (cyanidin-3-glucoside) content of the pomegranate juice expressed as cyanidin-3-glucoside was 0.10 mg/g in juice. Total phenolic content (TPC) of the pomegarante peel extract, showed by mg gallic acid equivalent (GAE), was 2325 mg GAE/g. That was 18.29 fold higher than seed extracts and 189.18 fold higher than in juice. The IC50 values of DPPH scavenging activities in the peel extracts was 12.04 µg/mL, 9.30 fold lower than that in the seed extracts and 282.48 fold lower than that in the fruit juice. Among those three parts of fruits, peel extracts displayed highest value of the total phenolic content and antioxidant capacity. However, the IC50 value of DPPH scavenging activities in ascorbic acid was 7.87µg/mL, 1.53 fold lower than that in the peel extracts.
