Determination of alpha - amylase and glucosidase inhibitory of bioactive compounds extracted from defatted sesame meals +CD
Abstract
Sesame meal have been widely used for producing oil technology while its
byproduct, defatted sesame meal extracts (DSM) obtained after the removal of oil,
presently used as cattle field. Current study evaluates the α-glucosidase, α-amylase
inhibition and antioxidant properties of variable sesame cake extracts. Defatted
seeds were sequentially extracted with ethanol-water 75:25 (v/v) and methanolwater 75:25 (v/v). Among the extracts results, methanol-water (75:25, v/v) extract
illustrated higher antioxidant activities, total phenolic content (TPC), total flavonoid
content (TFC) and the α-glucosidase and α-amylase inhibitory potential. Black
sesame extracts achieved the highest results in individual experiments compared to
other varieties of sesame. This study showed that antioxidant activity of defatted
sesame meal extracts was significantly affected by polar solvent, antioxidant assays
and extract concentration. These results demonstrate that sesame meal can be used
as a source of protein and bioactive compound in the development of functional food
for the management of diabetes.
