dc.description.abstract | Codonopsis pilosula, also known as Dang Sam, has great potential in
Vietnam; however, in order to introduce these product to global markets
and to domestic consumers believing in Dang Sam’s application, further
researches need to be conducted. This study aimed to optimize the
processing conditions of each steps of Dang Sam with the highest total
polysaccharides content (TPC) and soluble solid content (SSC). The
methods used to investigate TPC was Phenol-Sulfuric and SSC was
determined by using refractometer. The drying conditions were identified
using four drying temperatures (60, 70, 80 and 90oC) and four ethanol
concentrations (75, 80, 85 and 90 %). The sample was then examined with
4 different ratios between material and solvent (1:20, 1:25, 1:30, 1:35),
temperatures of extraction ( 75, 80, 85, 90oC) and times of extraction (1.5,
2, 2.5, 3 hours). As a result, the study indicated the optimal drying
conditions of Dang Sam was dried at 80oC for 7 hours, the optimal ethanol
concentration was 75% which extracted at 75oC in 3 hours was higher than
those extracted from others. At this condition, the highest TPC percentage
of the extract was 8.12 ± 0.03%. In general, this study contributed greatly
to food industry with the updates of polysaccharides content, nutritional
value and processing conditions of Dang Sam. This project will provide a
useful extraction method for further studies which improve the TPC,
nutritional value applied in food industry and science chemical-rich extract
for developing a functional food. | en_US |
