The majority of new businesses seek to satisfy customer demand for product quality while operating with minimal and reasonable expenses. Especially when a startup company has limited capital to develop and focuses on a niche market (in this case, the wine industry), stricter quality standards are required than ever before. This study aims to achieve these two objectives. This paper proposes and solves a model for optimizing the harvesting schedule using linear programming in order to provide a complete picture of market success, some solutions from the perspective of business acumen will be proposed alongside engineering solutions.en_US
